Pumpkin Balsamic Salad Dressing
3/4 cup canned unsweetened pumpkin puree
3 Tbsp white balsamic vinegar
1-2 Tbsp maple syrup
1 Tbsp tamari
1 Tbsp shallot, chopped
1 tsp Dijon mustard
Place in blender and puree. Store in glass jar in refrigerator. Will keep 7-10 days
