Pumpkin Veggie Pizza with Spicy Garbanzo Beans

For the pumpkin sauce

1 cup pumpkin puree, canned and unsweetened
½ tsp salt
1 tsp Italian herb blend
½ tsp garlic powder
¼ tsp onion powder
½ tsp cumin
½ tsp lemon juice
1 Tbsp non dairy milk
pepper to taste
Mix all ingredients together in a bowl and set aside

For the spiced garbanzo beans

1 cup cooked garbanzo beans
½ tsp cumin powder
1/4 -1/2 tsp cayenne pepper
¼ tsp paprika
¼ tsp garlic powder
¼ tsp cinnamon
½ tsp lime juice
Mix all ingredients until well combined and all the garbanzo beans are coated


Sliced onions
sliced tomatoes
sliced mushrooms or zucchini
fresh basil chopped
vegan parmesan
Pizza crust (I used Trader Joe’s gluten free pizza crusts -2 in pack)

Heat oven to 425.  Spread pumpkin mix over two crusts.  Add sliced tomatoes then top with onions and other veggies.  Add spiced garbanzo beans.  Bake 16-17 minutes.  Remove from oven   add basil and sprinkle with vegan parm.  Let the pizza sit for a minute and then slice and serve
