Creamy One Pot Asian Style Pasta

1 onion, chopped
2 cloves of garlic, minced
1 zucchini, chopped
1 small red pepper, chopped
4 ½ cups uncooked pasta
1 ½ tsp red curry paste
2 15 oz cans diced tomatoes
1 cup coconut milk, lite
1-1 1/2  cups vegetable stock if needed for thinning. 
1/2 cup peas
½ cup cherry tomatoes, cut in half
1 tsp  lemon juice
¼ cup cilantro, chopped

Saute onions in 1 Tbsp water 2-3 minutes.  Then add the garlic, zucchini, and red pepper.  Cook for another 2 minutes

Add the remaining ingredients except for cherry tomatoes and cilantro.  Cook about 13 minutes.  Add in cilantro and cherry tomatoes and heat through.   Salt and pepper to taste.
