Cucumber Tahini Dressing

1 medium cucumber, peeled, seeded and chopped
1/3 cup roasted tahini
¼ cup fresh lemon juice (about 2 lemons)
2 cloves garlic
½ tsp sea salt, or to taste
Pinch of cayenne pepper (optional)

In a blender, combine the cucumber, tahini, lemon juice, garlic, salt, and cayenne if using. Process until smooth and creamy. 
Add water a little at a time as needed to achieve a pourable consistency. 
Taste and adjust the seasoning as desired.
Use immediately or store in an airtight container in the refrigerator for up to 7 days.
