JP+ Complete Vegan Gluten-Free Muffins with Peanut Butter and Chocolate Chips

1 cups gluten free flour (I use red mill all purpose gluten free flour)
1/3 cup oats topped off with millet   (I just eyeball this    could do couple tablespoons of each)
½ cup complete powder
½ tsp sea salt
1 Tbsp baking powder
1/3 cup oats (can also add ¼ cup millet)
1 flax egg(1 Tbsp ground flax plus 3 Tbsp water, set aside for 5 minutes)
1 ripe banana
½ cup maple syrup plus ¼ cup water
1 tsp vanilla
3 Tbsp unsweetened applesauce
½ cup peanut butter (or other nut butter)
2 dates chopped; add to dry ingredients
½ cup chocolate chips ( can also add raisins, nuts, seeds)

Preheat oven to 350

Mix all dry ingredients.  Mix all wet ingredients.  Slowly add wet to dry.  12 regular size muffins or 24 mini muffins with a little left over.

Bake 20-25 minutes
