Apple Walnut and Quinoa Salad
1 cup quinoa, thoroughly rinsed ¼ cup chopped fresh parsley
2 gala or fuji apples, cored and chopped 1 1/2 Tbsp olive oil +1 ½ Tbsp water
2 tsp freshly squeezed lemon juice 1 ½ Tbsp sherry vinegar
½ cup chopped celery ½ tsp sucanat
1/2 cup walnuts, chopped and toasted ½ tsp sea salt
2-3 Tbsp minced red onion ¼ tsp ground pepper
Bring two cups of water to a boil and add quinoa. Reduce heat, cover and cook 15-20 minutes. Allow to cool in a bowl.
Combine apples and lemon juice in a large bowl, toss to coat. Add celery, walnuts, onion and parsley.
In a small bowl whisk together oil, water, vinegar, sugar, salt and pepper.
Add quinoa to the salad mixture and pour on the dressing. Toss to combine.
serve immediately or cover and refrigerate til ready to use. Serves4
