Cranberry Walnut Chickpea Spread (Curry)

2 cans garbanzo beans drained and rinsed
1 cup diced celery
½ cup dried cranberries(dates/raisins)
½ c chopped walnuts or pecans(cashews)
1/4 cup carrot shreds
½ cup sliced scallions
6 Tbsp. (1/3 cup) tahini or veg mayo
4 Tbsp ( ¼ cup) apple cider vinegar (lemon juice)
2 Tbsp water
2 tsp maple syrup
(3/4 tsp garlic powder and 1 Tbsp curry powder) 

Mix dressing and set aside to meld

Mash garbanzo beans with fork or potato masher.  Chop remaining ingredients and add to garbanzo beans.  Combine with dressing.  Mix well.  Refrigerate.
