One Pot Mac n Cheese

2 ½ cups red lentil (TJ) pasta
4 cups plant milk
1 cup winter squash, grated
1 ½ cups cauliflower florets, yellow if possible
1 cup leeks, trimmed and finely sliced
1 tsp nutmeg
½ tsp pepper
½ tsp sea salt
1 cup vegetable stock, crumbled
4 cloves garlic, minced
½ cup nutritional yeast
½ cup raw cashew meal

Combine all ingredients except garlic, yeast and cashew meal.  Bring to a boil.  Reduce heat and simmer 15 minutes.  Stir in garlic, yeast, and cashew meal.  Cover and remove from heat.  Let sit 5 minutes
