One Pot Vegan GF Pasta

1 onion, sliced
3 cloves garlic
1 pepper, chopped
8 oz mushroom, sliced
1 small zucchini, chopped
2 15 oz cans diced tomatoes (I use fire roasted tomatoes)
2 cups water
12 oz package GF pasta (I uses rice quinoa blend)
sea salt/pepper to taste
shake or two of Italian seasoning (feel free to add other spices to taste such as oregano or basil)

Saute onion in water, a tablespoon at a time as needed, 5-6 minutes, add garlic and peppers, 2-3 minutes.  Combine remaining ingredients and cook until pasta is done and vegetables are tender.
