Red Lentil Dal Stew

1 medium onion, sliced
2 cloves garlic, minced
3 oz tomato paste
1 cup red lentils
3-4 large carrots, chopped or diced
1 medium white potato, cubed
1 small sweet potato, cubed
6 cups vegetable broth (or 4 cups broth and 2 cups water)
1 tsp cumin
1 tsp smoked paprika
1 Tbsp madras curry
2 tsp turmeric
1 ginger powder
¾ tsp sea salt
1/8 tsp cayenne pepper
1 can lite coconut milk
salt and pepper to taste

Saute Onion in 1 Tbsp water, adding water as needed for 5-6 minutes.  Add garlic and cook 1-2 minutes  add all spices and stir til fragrant.  Add lentils, potatoes and broth/water.  Bring to a boil.  Turn to simmer, add coconut milk and cook til vegetables nad lentils are soft.  About 10-15 minutes.
