Cashew Cilantro Dressing vegan and oil free

Cashew Cilantro Dressing  vegan and oil free! 

½ cup raw cashews
1 cup fresh cilantro leaves
3 Tbsps lemon juice
½ inch piece of serrano pepper, seeded
3 cloves garlic
1 tsp hot sauce (optional)  I used siracha
sea salt to taste

Soak cashews for 30 minutes.   Blend ½ cup cashews with ¾ cup water until creamy.  Add cilantro, lemon juice, serrano pepper, garlic and hot sauce if using.  Blend until smooth

Taste and adjust seasonings. 

Makes 1 cup.  Store in glass jar in refrigerator.  Will last 7-10 days.  Can be frozen
