Cookies of Plenty w/Chocolate Chips, Pumpkin, Raisins and Pumpkin Seeds
¼ cup earth balance
2/3 cup sucanat
½ cup unsweetened applesauce
2 tsp vanilla extract
2 flax eggs (2 Tbsp ground flax seed + 6 Tbsp water, set aside to thicken)
½ cup pumpkin puree
2 cups large flake GF oats
1 cup buckwheat flour
¾ cup rice flour
½ cup raisins
1/2 cup Enjoy mini chocolate chips
½ cup raw pumpkin seeds
1 Tbsp pumpkin pie spice
½ tsp baking powder
½ tsp baking soda
½ tsp Xantham gum
¾ tsp salt
Preheat oven 375
Cream earth balance and sucanat. Mix in applesauce, vanilla extract, flax eggs and pumpkin. Set aside
In a large bowl, combine the remaining ingredients. Stir in the better mix.
Form into 2 ½-3 Tbsp dough into balls and flatten. Bake 14-15 minutes
