Cold Sesame Noodles

8 0z pkg noodles (I used brown rice noodles)
½ tsp sesame oil plus a slash
3 ½ Tbsp tamari
2 Tbsp rice vinegar
2 Tbsp sesame paste
1 Tbsp peanut butter
1 Tbsp ginger root, minced
2 tsp garlic, minced
2 tsp chili garlic paste
Cucumber cut into ½” cubes
Carrot shreds
Roasted Tofu

Cook noodles according to package.  Drain, rinse in cold water and toss with splash of sesame oil

Whisk together all but cucumbers, carrots and tofu.  Pour over noodles and toss.  Garnish with cucumber, carrot and tofu if using.
