Mediterraneaaan Orzo Salad

1 pound orzo (trader joes has GF ristoni)
1/4 cup lemon juice
2 Tbsp olive oil
1 pound tomatoes, diced
1 seedless cucumber, cut into 1/2” pieces
1/3 cup Kalamata olives, coarsely chopped
Salt and freshly ground pepper to taste
I have also added parsley, cilantro, lime juice with a touch of honey or maple syrup, a bit of green onion or shallot. Red peppers are also good

Bing to a boil a large pot of water. lightly salt. Prepare pasta according to package. Drain cooked pasta in colander, then rinse with cold water and drain well. set aside At this point you can add pasta to the bowl and toss it wiht some of the lemon juice/olive oil dressing.

Combine the tomatoes, cucumbers, olives, parsley, onion, and any other vegetables you are using. Toss with pasta, salt and pepper to taste and chill until ready to serve. Makes 12 servings
