Apple Cinnamon Cake

2 cups GF flour (I used 1 cup GF oats ground into flour and 1 cup almond flour)
1 Tbsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1/2 cup chopped walnuts
1 large apple, chopped (I used 1 1/2 apples or 1 apple and 1/2 pear)
1 cup unsweetened apple sauce
2 flax eggs (stir 2 Tbsp ground flax with 6 Tbsp warm water and set aside)
3/4 cup sucanat ( sugar cane natural or coconut sugar)
1 tsp vanilla

Combine dry ingredients. set aside.
Combine flax egg, sugar, apple sauce and vanilla.
Stir wet ingredients into dry. Fold in apples and walnuts.

Pour into 9” greased cake pan and bake at 350 for 45 minutes. Cool 15 minutes
or makes 16 cupcake size muffins bake 350 for 24 minutes and cool in pan 5-10 minutes

Optional: sprinkle tops of cake/cupcakes with sucanat before baking.
