Roasted veggies with Heart of Palm Pasta

2 small zucchini, large chop
1/2 onion, chopped
2-3 roma tomatoes, seeds removed, chopped
Bag of Petite potatoes (or 3-4 potatoes of your choice peeled and cut into bite size pieces)
Handful of mushrooms
Salt
2 tsp dried basil
1 tsp red pepper flakes
3 Tbsp dried parsley
1 sprig fresh thyme (1/2 tsp dried thyme)
4 oz vegan cheese
1 Pkg heart of palm pasta

Preheat oven to 350

Wash and chop veggies in bite size pieces. Spread veggies on parchment lined baking sheet.

Sprinkle with spiced, give a toss.

Bake 20 minutes. Toss with heart of palm pasta.  Sprinkle with vegan cheese and bake til heated thru 10-15 minutes

PS you can place veg in a baking dish if you like
