Roasted Sweet Potato Hummus

3 Sweet potatoes, baked
1~15 oz can garbanzo beans, drained and rinsed (reserve liquid)
2 Tbsp reserved liquid
2 Tbsp tahini
2 Tbsp lemon juice
¼ tsp cumin
¼ tsp coriander
¼ tsp ground white pepper
sea salt to taste

Preheat oven 400.  Wash and wrap potatoes in foil.  Bake 45 minutes or when soft to touch. Remove from oven and slice in half

Mix garbanzo beans in food processor with reserved liquid.  Add sweet potatoes.  Blend together.

Add in tahini, lemon juice, cumin, coriander, pepper and salt.  Add reserved liquid as needed to create a smooth hummus.
