Pumpkin Almond Butter Energy Bites

3 cups GF oats
1 cup almond butter
½ cup maple syrup
½ tsp cinnamon
½ tsp pumpkin pie spice
1 tsp vanilla extract
¼ cup mini chocolate chips
¼ cup raw pumpkin seeds
½ cup vanilla complete (for you chocolate lovers…go for it….use the chocolate complete)

Combine dry ingredients in a food processor and pulse lightly.  You want this to still be coarse

Roll into walnut size balls and store in airtight container in the refrigerator.   I put them on a plate and freeze.  After frozen I move to a plastic ziplock bag.
