Pumpkin Spice Chocolate Chip Oat Bars

1 cup oat flour (I ground 1/2 the oats into flour)
1 1/4 cups almond flour
1/4 cup tapioca flour
1 scoop vanilla complete (1/4 cup)
1 Tbsp cinnamon
1 Tbsp pumpkin pie spice
1 tsp ground ginger
1 tsp baking powder
1/2 tsp sea salt
2 cups pumpkin puree
1 1/2 cups plant milk (your choice)
1 cup natural almond butter
1/2 cup pure maple syrup
2 tsp vanilla extract
1/2 cup mini chocolate chips (I use Enjoy brand vegan chips)

1/2 cup pecans, chopped, optional

Directions:

Preheat oven 350 (if using glass 325). Lightly grease 13x9” pan (or line with parchment paper)
Combine dry ingredients and set aside.
Combine wet ingredients and stir into dry ingredients.
Fold in chocolate chips and pecans, if using.
Spread in baking dish and bake 45 minutes, let cool 10-20 minutes and enjoy!
