Healthy Pumpkin Bars Vegan and GF
½ cup pumpkin puree
½ cup almond butter
½ cup maple syrup (fill ½ cup 3/4th full and top with water for less sweetness)
2 flax eggs (2 Tbsp ground flax + 5 Tbsp water set aside)
½ tsp vanilla extract
½ cup almond flour
¼ cup GF oat flour
2 tsp pumpkin pie spice
¼ tsp baking powder
¼ tsp sea salt
½ cup chocolate chips (plus more to sprinkle over top)
Preheat oven 350. Lightly grease 8x8 baking dish and line with parchment paper. Mix flax and water and set aside
In a large bowl combine pumpkin puree, maple syrup, almond butter, flax eggs and vanilla. Whisk til smooth
In a separate smaller bowl combine almond flour, oat flour, pumpkin pie spice baking powder and salt. Whisk together
Combine dry ingredients with wet ingredients. Transfer mixture to prepared baking dish. Sprinkle extra chips on top.
Bake 30-34 minutes. Cool in pan for 30 minutes. Lift out using parchment paper overhang. Store in fridge or freeze
