Avocado chocolate peanut butter Mousse

INGREDIENTS
4 oz semisweet chocolate (I use Enjoy vegan chips)
1 tbs plant milk
2 avocados
2 tbs cocoa
2-3 tbs pure maple syrup
2 tbs honey
2 tsp vanilla extract
pinch of salt
1/4 cup natural peanut butter

PREPARATION
Put the chocolate in a microwave safe bowl and stir to coat with the plant milk.  Microwave for 45 seconds.  Stir, then microwave for 30 seconds.  Repeat with decreasing times until the chocolate is melted and smooth.  Mash the avocado in a food processor until smooth or mash roughly with a fork, then whisk to get the lumps out.  Combine the melted chocolate with the smooth avocado.  Add the remaining ingredients except for the peanut butter. Then add the peanut butter.  Makes four servings.  I use my cookie scoop and freeze on parchment paper. Perfect size for that sweet bite you might be looking for.  or put in a bowl with berries and a dollop of almond Reddi whip! Small but rich!
