**Vegan GF Peach Oatmeal Muffins**
Vegan GF Peach Oatmeal Muffins
Topping
7 Tbsp sucanat
¼ cup oat flour
3 Tbsp tahini
2 tsp cinnamon
Mix together and set aside
Ingredients
1 ½ cups flour (I used a combo of ¾ cups almond flour, ¼ cup oat flour, ¼ cup tapioca flour and ¼ cup all purpose GF flour)
½ cup sucanat (sugar cane natural)
½ cup oats
½ tsp sea salt
1 tsp cinnamon
2 tsp baking powder
½ cup unsweetened applesauce
1 banana
½ cup almond milk (I used soy milk)
1 ½ tsp vanilla extract
1 cup fresh or frozen peaches (I added a few dried wild blueberries…would be good with raspberries)
Preheat oven 400. Line 12 regular muffin tins
Whisk together dry ingredients through baking powder.
Whisk together wet ingredients, applesauce through vanilla extract.
Add peaches to dry ingredients, stir together then add wet ingredients and stir just til combined. The muffin batter will be thick.
Fill muffin cups, top with topping above and a few sliced almonds or additional peaches
Bake 15-20 minutes or until toothpick comes out clean. If the tops are browning too much turn oven down to 375. Allow to cool in muffin tins. Enjoy!
