Gluten Free Black Bean Brownies

1 (15oz) can black beans, drained and rinsed
¼ cup chocolate chips plus some for the tops
3 Tbsp oil ( 3 Tbsp unsweetened apple sauce)
3 eggs (3 flax eggs 3 Tbsp ground flax and 9 Tbsp warm water)
2/3 cup packed brown sugar ( 2/3 cups sucanat or coconut palm sugar)
½ cup unsweetened cocoa
1 tsp vanilla
½ tsp baking powder
1/8 tsp salt


Preheat oven 350 in a food processor, combine the beans, chocolate chips and applesauce.  Blend until combined.  Add the eggs, brown sugar, cocoa, vanilla, baking powder and salt;  cover and process until smooth. 
Transfer to mini cupcake pan.  Coated with cooking spray.
Bake 20-25 minutes or until toothpick inserted near center comes out clean.   
Cool on rack.
