Soft and Chewy Chocolate Brownie Protein Bars

Ingredients
1/4 cup almond butter (or any nut/seed butter)
1/2 cup dates (about 6 large Medjool dates)
3/4 cup unsweetened vanilla almond milk
1 tsp vanilla extract
1/2 cup chocolate or vanilla Juice Plus Complete protein powder
1/4 cup unsweetened cocoa powder
1/4 tsp sea salt
1 3/4 cup oats (use gluten-free)
1/3 cup mini dairy-free chocolate chips

Instructions
Preheat oven 350 and prepare 8"x8" baking dish by lining it with parchment paper, leaving a few inches of overhang on the sides for easy removal.  
Add almond butter, dates, almond milk and vanilla to bowl of food processor.  Process until smooth and well combined.  Add Complete, cocoa and salt.  Continue to process.  Finally add oats and pulse until combined.  You don't want to break down too much.  Stir in chocolate chips by hand
Transfer dough to prepared pan.  Using a spatula, spread mixture evenly in pan.
Bake for 15 minutes, until edges and top have set.  remove from oven and let cool in the pan .  When cool, lift from pan and cut into bars.
Store in airtight container for one week or in fridge>  

Notes
If you do not have dates on hand, you can easily use 1/4 cup honey or brown rice syrup.
