Mango Hemp Dressing

3/4 cup mango chunks (I used frozen)
2 Tbsp hemp seeds
2 Tbsp fresh squeezed lime juice (or red wine vinegar)
1/4 cup water (+2-3 tsp or more to thin)
1/2 Tbsp chopped shallots or 1 Tbsp whitish part of green onion
1-2 Tbsp maple syrup or agave nectar (I use half maple half water)
1/2 tsp Dijon mustard
1/2 tsp sea salt
freshly ground pepper

In a blender, puree all ingredients.  start with 1/4 cup water and add moretsp at a time as needed.  
try adding 1-2 Tbsp chopped cilantro or basil while pureeing.
