Seeded Pecan Walnut Granola

¾ cup raw pecan pieces
¾ cup raw walnut pieces
¼ cup maple syrup

3 2/3 old fashion oats (GF)
¾ cup raw pumpkin seeds
¾ cup raw sunflower seeds
2 Tbsp hulled hemp seeds or ¼ cup unsweetened coconut
1 tsp flaky sea salt
¼ tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger powder
2 Tbsp coconut oil, melted
¼ cup maple syrup

½ cup dried fruit

Heat oven to 375 (350 convection oven). Line baking sheet with parchment paper
Combine pecans, walnuts and ¼ cup maple syrup. Set aside.
Combine remaining ingredients except dried fruit.  Spread oat mixture onto prepared baking sheet.  Bake 7-10 minutes until edges begin to brown.  With a fork rake edges to middle and middle to edges.  Return to oven and bake another 7-10 minutes until edges begin to brown.  Rake oat mix again.
Sprinkle nut mixture over top of oats.  Return to oven to bake 5 minutes.  Sprinkle dried fruit over oats and nuts and rake as before.  Return to over for another 5 minutes. 
Cool completely.  Makes 8 cups
Store in tightly sealed container.  I stored in two qt mason jars.  Keeps for 1 week if it lasts that long!!!!
