Moroccan Power Salad

Salad Ingredients
1 ½ cup cooked quinoa (1/2 cup uncooked quinoa)
1 cup matchstick carrots
4 scallions, sliced thin
1- 15 oz can chickpeas, drained and rinsed
1/3 cup dates, chopped
1/3 cup raisins
¼ cup pistachios , chopped
1 bunch parsley, chopped (if it is a really large bunch, use ½)

Lemon Honey Dressing
½ tsp cumin
1 Tbsp oil
2 Tbsp lemon juice
2-3 Tbsp water
1 Tbsp honey ( I use maple syrup)
½ tsp salt
1/8 tsp chili powder

Cook quinoa and let cool
combine remaining salad ingredients in a large bowl
Combine dressing ingredients in small jar and shake. 
Add quinoa to other salad ingredients and toss with dressing.   Refrigerate.  Enjoy
