5 Ingredient Coconut Curry

1 can lite coconut milk
2 Tbsp red curry paste
2 small heads broccoli
2 cloves garlic, minced
1 onion, sliced
1 can chickpeas, drained and rinsed
1/2Tbsp cornstarch (arrowroot) dissolved in 2 Tbsp water

Saute garlic, onion and broccoli in 1-2 Tbsp water
Add coconut milk and cook 5-8 minutes, til broccoli is softened
Add curry paste
Add chickpeas
bring to slight boil and add dissolved cornstarch
