Glass (or Soba) Noodles Salad with Avocado and Mango

2 Tbsp brown rice vinegar
2 Tbsp lime juice
1 tsp agave nectar
2 tsp sesame oil
2 tsp olive oil
¼ tsp sea salt or to taste
8 ounces soba noodles
1 medium avocado, cubed
1 jalapeno pepper, minced
2/3 cup ripe mango, cubed
¼ cup fresh mint, chopped
2 scallions, thinly sliced

In  a large bowl, whisk together vinegar, lime juice, agave, oils and salt.

Cook soba noodles according to package being careful to not overcook.  Drain, rinse in cold water and drain.

Gently combine the noodles, dressing, avocado, jalapeno, mango, mint and scallions
