Easy Vegan GF Peach Crisp

Filling
4 tsp real maple syrup
2 tsp cornstarch or arrowroot
1 ½ tsp lemon juice
Sea salt to taste
2 cups sliced peaches (I used frozen)

Biscuit Topping
¼ cup unsweetened applesauce
1 Tbsp real maple syrup
2 tsp almond butter
¼ tsp apple cider vinegar
¼ tsp vanilla extract
1/3 cup oat flour
¾ tsp baking powder
Sea salt to taste

Instructions
1. Preheat oven to 425

2. Combine maple syrup, applesauce, lemon juice and cornstarch.  Gently stir in peach slices. Transfer to 9x5 baking dish, cover and bake 20 minutes at 425. 

3. Stir together applesauce, maple syrup, almond butter, apple cider vinegar and vanilla.  Set aside

4. Stir together oat flour, baking powder and sea salt.  Combine with wet ingredients

5.When peaches are done baking. Drop spoonfuls of biscuit topping over peaches and bake at 350 for 20-30 minutes uncovered. 

Cool and enjoy warm or refrigerate.  If you want whip cream, try whipping up full fat coconut milk
