Spicy Vegan Lentil Dahl with Veggies
1 cup white onion, diced
2 cloves garlic
1 cup dried red lentils
4 cups peeled and diced veggies
1-14 oz can fire roasted tomatoes
1- 14 0z can lite coconut milk
1 cup vegetable broth
1 Tbsp madras curry powder
¼ tsp cinnamon
1/8-1/4 cardamom
cayenne pepper (optional)
Saute onion and garlic with 1 tbsp water (more as needed to prevent sticking) when onion is softened, add red lentils, curry powder, cinnamon and cardamom. Heat til spices are aromatic. Add tomatoes, coconut milk and veggie broth. Stir in veggies and cook 10-15 minutes til lentils are tender. Serve with cilantro over rice.
