Watermelon Gazpacho

4 cups seedless watermelon, chopped (I use a personal size watermelon)
1 cucumber, diced (I use an English cucumber, no seeds)
1 red, orange or yellow pepper, chopped     

1 small red onion, diced
1 Tbsp lime zest

2 Tbsp lemon or lime juice
1-2 Tbsp olive oil
1 jalapeno, minced                   

2 Tbsp parsley or cilantro (I use cilantro)
Salt and pepper to taste

Puree 3 cups of the watermelon.  Stir together the remaining vegetables.  Combine with puree and remaining watermelon.  Chill 1 hour and enjoy
