Broccoli Soup

½ cup chopped red onion or white onion
2 cups finely chopped broccoli or broccoli slaw
1 tsp garlic powder
¼ tsp onion powder
¼ tsp black pepper
¼-1/2 tsp ground cumin
1/3 tsp ground coriander
¼ tsp cayenne
2 Tbsp nutritional yeast
¾ tsp salt
3 Tbsp chopped basil or those little frozen cubes you can buy at the store
¼ cup raw cashews soaked for 15 minutes
2 cups non dairy milk + extra to thin soup if it gets too thick
Vegetable Broth (optional)

Saute onions, adding Tbsp water as needed.  Cook about 6 minutes

Add shredded broccoli and spices.  Mix in nutritional yeast and salt.  Add a bit of water or vegetable broth as needed to keep from sticking

Blend the cashews with 1 cup plant milk and basil.  Add to soup.  Add remainder of plant milk bring to a boil. 

Simmer about 5 minutes.  If soup gets too thick add ¼-1/2 cup water, plant milk or veg broth

Adjust seasonings and simmer 3-5 more minutes.
