Sweet Potato Broccoli Quinoa Curry

1 medium sweet potato, peel and chopped
1 large broccoli crown cut into florets
½ onion, diced
15 oz can chickpeas, rinse and drain
28 oz diced fire roasted tomatoes
2 cans lite coconut milk
½ cup uncooked quinoa
2 cloves garlic, minced
1 Tbsp ginger, minced
1 tsp turmeric
2 tsp tamari
1 tsp miso
½-1 tsp pepper flakes (optional)

Add all ingredients to crock pot.  Cook until vegetables are tender.  Enjoy!!!!
