Double Chocolate Peppermint Cane Cookies

Double Chocolate peppermint cane cookies vegan and GF

1 cup almond butter
3 Tbsp water
1/2 cup maple syrup
1 tsp vanilla
3/4 cup almond flour
1/2 cup cocoa
1/2 tsp sea salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup mini chocolate chips (I use Enjoy brand)
1/3 cup crushed peppermint canes

1/4 cup crushed peppermint canes for topping

Preheat oven 350

Mix together almond butter, water, maple syrup and vanilla, set aside

Mix together almond flour, cocoa, salt, baking soda and baking powder.  Stir into wet ingredients.

Stir in chocolate chips and 1/3 cup crushed peppermint cane.

Roll into balls and dip just the top of the cookie into the 1/4 cup crushed peppermint cane.  Place on baking sheet and flatten 1/2 way.

Bake 10-12 minutes.  cool on sheet 5 minutes and transfer to cooling rack.
