Chocolate Baked Oatmeal

2 cups coconut milk
1/3 cup peanut butter
1/2 cup maple syrup
1 tsp vanilla extract
2 cups oats (I used Trader Joe’s GF oats)
1/4 cup cocoa powder
1 Tbsp ground flax seed
1 tsp baking powder
Pinch or two of sea salt
1/3 cup mini chocolate chips(I used enjoy vegan chips)

Preheat oven 350

Stir together first 4 ingredients and set aside
Stir together remaining ingredients and stir liquid into dry
Pour into baking casserole dish, lined with parchment paper or lightly sprayed with oil (I used 11x7 pyrex)
Bake at 350 for 40 minutes
