Orange (Cranberry) Banana Bread

3/4 cup brown rice flour
6 Tbsp millet flour
3/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp sea salt
½ cup sucanat
1-1 ½ Tbsp orange zest (2-3 oranges)
1 cup (3 ) bananas mashed
2 eggs (I used flax eggs 2 Tbsp ground flax+6 Tbsp water, set aside)
1/4 cup unsweetened apple sauce
1/4 cup plant milk + 1/4 tsp vinegar
3/4 cup chopped pecans
(optional 1/2 cup chopped fresh cranberries)

Preheat oven 350 prepare loaf pan by spraying with oil, line bottom of pan with parchment paper leaving some hand over short ends of pan, spray paper and dust entire pan with rice flour

Whisk together flours, baking soda, baking powder and salt, set aside

Stir together sugar, orange zest and bananas.  Whisk in eggs, set aside

Combine dry and wet while slowly adding 1/2 the apple sauce and plant milk. Mix in the remainder of applesauce and plant milk.

Gently stir in pecans.  Pour into prepared loaf pan and bake 50-60 minutes or until very firm to the touch.  Cool in pan on wire rack for 15 minutes.  Run a knife around edge to loosen from pan.  Lift out using parchment paper ends and completely cool on wire rack before slicing.
