Watermelon Gazpacho

4 cups watermelon, chopped
1 Tbsp lime zest
2 Tbsp lime juice
1 tsp sea salt
1-2 garlic cloves, minced
1 cup diced tomatoes, roma work best
1 cup seedless cucumber, chopped
1 small red, yellow or orange pepper, chopped
1 small red onion, diced
1 Tbsp red wine vinegar
2 Tbsp olive oil
1 Tbsp jalapeno pepper. Minced
2 Tbsp cilantro

Puree 3 cups of the watermelon.  Stir together the remaining vegetables.  Combine with puree and remaining watermelon.  Chill 1 hour and enjoy
