Savory Pumpkin Pasta Sauce

1 Tbsp water or more as needed
1 small sweet yellow onion, diced
4-5 cloves garlic, minced
1 cup pumpkin puree
1- 14.5 ounce can fire-roasted tomatoes
1 cup lite coconut milk
1/2 cup water
1 1/2 tsp dried oregano
1 tsp dried basil
3/4 tsp sea salt
3/4 tsp fresh ground pepper
1/8 tsp cinnamon

Saute garlic and onion, adding water 1 tbsp at a time when it begins to stick.  Cook about 5 minutes until translucent

Combine pumpkin, coconut milk, tomatoes and water in a blender and blend until smooth. ( I just added as is to the onions and garlic mixture)

Pour pumpkin mix (if blended) over onions and garlic, stir well. Turn heat to low

Add dried oregano, basil, salt, pepper and cinnamon to above mixture.  Allow to simmer, uncovered 10-15 minutes, stirring often.

Roast veggies of choice at 375 while cooking sauce usually takes about 20 minutes

Cook pasta according to package and drain well. 

Combine pasta and veggies.   Pour the pasta sauce over the pasta and veggies.  Garnish with fresh oregano and ENJOY!!!
