Apricot Bliss Balls

Apricot Bliss Balls

2 1/4 cups dried apricots, free of sulphur dioxide
1 cup medjool dates
1/2 cup chopped raw walnuts
1/4 cup unsweetened coconut
1/3 cup vanilla complete protein powder
1 cup GF oats + 1/4 cup oat flour
1 1/2 tsp cinnamon
2 Tbsp chia seeds
1 tsp vanilla extract
1/2-3/4 cup almond butter
water as needed to bring it all together! 

Place apricots in food processor and process til crumbly.  Add dates and do the same.  Continue with walnuts and coconut.
Blend in almond butter, vanilla
Place all into a bowl with oats, oat flour, Complete,  chia seeds and cinnamon.   Add a little water as needed to bring it all together.  (this is where you gain your muscle) 
Roll into 1” balls  Roll in coconut if desired 
Keep in fridge 3 days or freeze 3 weeks
