Cauliflower Rice with Vegetables
1 medium head cauliflower, stem removed, cut into florets
1/2 red onion, sliced thin
2 cloves garlic, minced
1 zucchini, cut into matchsticks
1 red pepper, sliced thin
8 oz muchrooms, sliced
1 carrot, chopped
Simple Sauce
1 Tbsp chili garlic sauce
1 tsp amino acids
1 -2 Tbsp tamari
splash of sesame oil
fresh basil (or 1/2-1 Tbsp dried basil)
water as needs for saute and to thin sauce
2 Tbsp hemp hearts (optional)
red pepper flakes (optional)
Place Cauliflower florets in food processor in small batchs and pulse for 10-20 seconds, then process until resembles rice. Set aside.
Stir together simple sauce ingredients and set aside.
In a large skillet, saute onion and garlic for 2 minutes, adding water Tbsp at a time as needed.
Add the carrot and red pepper. Cook for another 2 minutes.
Add zucchini and mushrooms. Cook another 2 minutes.
Add cauliflower and sauce and heat through. Add a few Tbsp water if needed.
Add hemp hearts if using and garnish with fresh basil and red pepper flakes for added heat!
