Creamy Cajun Pasta
1 Bell Pepper, chopped
1 Onion, Chopped
2 cloves Garlic, diced
2-15oz fire roasted diced tomatoes
Mushrooms, chopped
Spinach leaves, rough chop
2 cans lite coconut milk
1/4 cup cooking wine or vegetable broth
1/2 cup nutritional yeast
2 cups vegetable broth
1/4 cup cajun seasoning
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp italian seasoning
1 Tbsp smoked paprika
1 pound pasta. I used lentil penne pasta
Saute pepper, onion and garlic.
Add remaining ingredients and cook until pasta is tender.
Garnish with fresh parsley or cilantro
