Sourdough English Muffins

Sourdough English Muffins

1/3 cup active starter
1 Tbsp sugar, honey or maple syrup
¼ cup water
3 Tbsp melted butter (I used earth balance
1 cup warm milk (I used plant milk)
3 cups flour
½ tsp salt

Mix starter, sugar, water, melted butter ,cooled and warm milk.  Add in flour and salt.
Rest for 30-60 minutes
Knead 5-6 minutes on floured surface
Bulk ferment 8-12 hours in bowl on counter
Divide into 12 pieces, shape and flatten
Let rise on parchment covered baking sheet for 30 minutes
Dust a skillet with cornmeal, cook 3-4 muffins covered 7 minutes each side.  Watch closely so as not to burn.  I had my burner on 2-3
If not at 200 degrees (thermometer in center of muffin) place back on baking sheet and bake at 250-300 for another 10 minutes  ENJOY!!!
