Asian Style Vegan Coleslaw

Dressing

¾ cup vegan mayo (or vegan no oil mayo)
1 Tbsp red wine vinegar
1 Tbsp lemon juice
1 Tbsp maple syrup (or honey or agave)
1 Tbsp tamari
¼ tsp sesame oil
Sriracha (optional)
1 Large garlic clove, minced
1” ginger root, minced

Slaw

4 cups cabbage (green, red, broccoli, sugar snap peas, Chinese cabbage)
½ red bell pepper
3 green onions (I used ½ shallot)
¼ cup cilantro
peanuts (optional)
